A Great Vegan, Gluten Free Breakfast Fritatta
Hi Everyone,
I recently served this and got rave reviews- it was so easy and very tasty and I wanted to share it as I know it can be hard to find hearty vegan, gluten free brunch dishes!!

Mock Tuna Salad
Mock Tuna Salad, vegan and gluten-free (check label on tempeh, some are GF, others are not)
Start with a package of tempeh. Shred the tempeh with a grater (as if you are making latkes). Place the shredded tempeh in a steamer, and steam for about 15 minutes. Steaming the tempeh makes its flavor a bit milder... Let the tempeh cool. Add your favorite vegan mayo (I like Wildwood Garlic Aioli). Add about 1/4 cup finely chopped onion (to taste), and a couple of tablespoons pickle relish (again, to taste). Salt & pepper to taste. If you like, you can add a little prepared mustard and/or finely chopped celery. Stir everything together and chill. Makes an awesome sandwich, on toasted bread with lettuce, or you can eat it with crackers, or just right out of the container :)

PB&J Smoothie
Ingredients:
Almond milk (or whatever kind of milk you want)
Peanut butter OR peanuts (depending on what kind of blender you have)
Frozen fruit (like strawberries or other berries)
Optional: maple syrup
Optional: banana
Yum!!!!
